feat:Elasticsearch publisher shared, refactor directories

• Centralised Elastic publishing: Extracted shared logic to elastic::putDocument/putEngineException, deleting ~290 duplicated lines across the runner and consumer paths.
• Logged engine exceptions: Added best-effort Elastic logging for exceptions inside operations.cppm.
• Reorganised definitions: Structured tradingDefinitions/ into config/ and variables/ subdirectories, renamed the JSON helper to strategyVariables.cpp, and updated all includes.
• Improved load command: Added CLI selection for the sweep generator, defaulting to "random" and handling unknown names gracefully.
• Refactored runner: Split the drain loop into drainRuns.cpp/.hpp to clean up redisRunner.cpp.
