feat(lab-08): zero-downtime rolling deploys and rollback - #9

- deploy.sh: start the new container next to the old one, wait until healthy, then stop the old one gracefully; abort and keep the old version if the new one never becomes healthy; record deploy history
- rollback.sh: redeploy the previous successful tag
- hello-api: drain on SIGTERM (SHUTDOWN_DELAY) by failing /health before closing the listener; unit test for draining
- Dockerfile: --start-interval=1s so new containers turn healthy fast
- Traefik: retry middleware and a /health service check for hello-api
- Lab 08 guide and knowledge base with measured results (74,746 failed requests before, 0 after)
