docs: rename C1 to C1.ai in baton connector docs (prose)

Summary

Renames "C1" → "C1.ai" in running prose across baton/*.mdx connector setup docs, per the updated company/product naming style guide.

Left unchanged (by design):

• Customer-typed placeholder examples ("Give the API token a name, such as C1")
• Code fences, inline code spans, and YAML/HCL/shell comments and placeholders inside them
• conductor.one / c1eu.ai domains
• C1AI (existing distinct product name)

Not included in this PR — held for follow-up, per open questions:

• A handful of ambiguous "C1 SSO" / generic "C1" app-name references (e.g. microsoft-entra.mdx, v1/azure.mdx) that may be a fixed pre-provisioned app name rather than a customer-chosen one
• Live product-UI labels not yet renamed in the app itself (C1 MCP, C1 Gateway, C1 System)

Test plan

• Dry-run classifier reviewed before applying; sample diff spot-checked for correct handling of frontmatter, possessives, and code-block exclusions
• Verified no double-rename artifacts, C1AI and domain exceptions intact
• Docs team review of rendered pages
