build: update dependencies with known vulnerabilities - #10

Update golang.org/x/net to v0.60.0, the OpenTelemetry SDK and OTLP trace exporters to v1.45.0, google.golang.org/grpc to v1.83.1 and golang.org/x/text to v0.42.0, which fix the vulnerabilities govulncheck reports for the versions in use. golang.org/x/net v0.60.0 requires Go 1.26, so the module and the builder image move to Go 1.26.9. Go 1.26 deprecates the coordinate fields of the ECDSA keys: the proof JWK is built from and parsed into the uncompressed point encoding instead, which also rejects points that are not on the curve, and the tests compare keys with Equal.
