ci: run the macOS jobs on the org Mac runner when enabled - #28

… set Each macos-26 job reads the org variable MACEM_MAC_RUNNER; set, it runs on the self-hosted Mac (never for a fork PR), unset, on GitHub's macos-26 as before. On the Mac the job picks Xcode 26.6 through DEVELOPER_DIR, never xcode-select. Job and check names are unchanged. Done: macOS jobs can leave the free-plan queue.
