docs: replace /paramètres-* commands with /paramètres subcommands - #32

C:/Program Files/Git/modération is split into /sanctions, /rôles and /statistiques, and /paramètres rôles is now a single panel with an audit button.
C:/Program Files/Git/statistiques now applies the selected period (3, 7 or 14 days) to every stat, /sanctions shows insults sent over the last 15 and 30 days, and people who left the server are labelled as such. Also fixes the quick action button name (Expulser temporairement).
