I'm not a fan of the added difficulty in reading the configuration, but it's not something that has to be used. So, 🤷♂️.

The current setup/passing of transforms makes more sense if you're deserialising your instrumentations and therefore can't reference the functions.
This PR adds the ability to pass custom transforms as functions along with the other configuration options.
