[BUG] topologies with virtual DAI don't work with older kernel

Concern raised in #10546 (comment)

Filing a bug as I think we have virtual DAIs used in previous PRs as well, so let's track the dependencies in this bug.

Expected behavior
New releases of topology files need to work with older versions of kernel (exception new platforms that anyways need a new kernel).

Marking as P1 to ensure this is solved before next sof-bin release.

@bardliao can you take a look at first. Is this just the one commit (of one PR)?

I think we need to revert [1] this for production, it will break fucntion topologies on pre 7.0, NVL is supposed to be usable w/ 6.19..
Then we need to figure out what to do...

Thanks @kv2019i @ujfalusi for raising the issue. We probably need a kernel change to select the function topology with echo reference when the virtual DAI link is created.

Revert merged so lowering to P2
