Custom PostgreSQL options bypass the CMD-only socket setting, causing startup failures on read-only root filesystems or mismatches with PGHOST=/tmp; start.sh must apply the default while preserving explicit overrides.

What changed in this PR
This PR addresses reproducible release-build failures by correcting download assets and package pins, and moves PostgreSQL sockets to /tmp for read-only runtime compatibility. DokuWiki, OSCam, and ProjectSend remain outside these fixes.
Changes:
- Switch Unpackerr to its versioned release tarball.
- Update nginx, Valkey, and PostgreSQL pins; add a Valkey version-alignment check.
- Configure PostgreSQL servers and local clients to use
/tmpsockets.

The release build failed on stale package pins and asset URLs across several apps. This updates the reproducible build failures and PostgreSQL’s read-only socket configuration.
/tmpfor read-only runtime compatibility.r1945asset is gone; current releases use an incompatible layout and require a broader migration.
